Baby Back Ribs!!!!

Today was the last day of my "four day" long vacation from work. I definately needed the time off and I'm really sad that it has already come to an end. It was nice to have the ability to sleep in, relax, veg out, surf online, do laundy, run errands, and ponder about what I want to do with my life. I surprisingly was able to accomplish all the items I had on my to do list and still have time to relax and rest. Life is great.

It was a rather unproductive day. I slept in until 11am, shaved my head, showered up, watched television, and met up with my parents for dinner. Since it was my last final day off, I really just wanted to relax. There's a lot going on. For example my great aunt just passed away on Father's Day. I just saw her on June 6th and she looked in good health for her ripe age of 87. She wasn't in tip top good health, had to take everything slow, and she did have the braveness to do her routine walk around Clement Street with a walker. A very strong woman indeed. Whenever someone I know passes, I always like to reflect and save a happy thought about that person. My aunt was a very saavy stock investor, and I know I'll miss her calling me about what's a good stock to purchase. The good memory that I can remember is spending good quality time talking to her and enjoying her company. Since my paternal and fraternal grandparents passed away in the 1990's, she was the closest person to me that I can look up to as a family elder. May she rest in peace.

Back to the events of today.....my parents came over in celebration of my dad's late "father's day" dinner. My dad hates dealing with the father's day crowd so we to Claim Jumper in Concord for dinner. When you think LARGE portions, you think Claim Jumper. My mom had liver, onion, and bacon over mashers. My sister had Chicken Fried Steak (half portion) that looked like a regular sized portion anywhere else. My dad had Braised Short Ribs over mashed potatoes. If you don't know my dad, he hates anything with mayonaise, ketchup, mustard, horserasdish, sour cream...etc. The mashed potatoes did have a questionable cream sauce on it that he wanted my sister to taste. He also asked the waiter about the ingredients. The waiter came back to tell him that the cream sauce had sour cream and horseradish in it. So my dad asked for just plain mashed. The waiter returned with his dish stating, "here's your meal with extra mayo." It was a great joke to pull on my dad, because he had this worried look on his face when he mentioned it. I had the full slab baby back ribs. I'm sure the rack was nearly a foot long. I couldn't finish it. Way too much food! We had no room for dessert.

For those who don't know me. I'm not a glutton. I just love to eat. Being an avid eater like myself, it's doesn't help me at all when I have a few health issues to take into consideration. Once in awhile is ok to eat...but I've been eating out a lot. So for all you eaters out there, enjoy one on me.
